Can you guess where the green color of this chiffon cake come from? (It is not green tea…)
The answer is “Komatsuna”. In Tokyo, there is an area where Komatsuna is their strategic crop and they have a lot of Komatsuna farmers and restaurants and cafes specializing in Komatsuna dishes.

Komatsuna soba

Komatsuna tofu
They even created a cute character “Komatsuna-kun”

Komatsuna came to Japan from southern Europe in 8th century. They were called by various names at first but in 17th century Shogun at the time named it as Komatsuna after the village he ate it for the first time. That is how Edogawa-ward, Tokyo became famous for komatsuna, and it is one of our destinations during our trip in February. We will keep you posted what we encounter there.
For now, we still keep bringing our products to the market with excitement. Our newest creation is chickpea curry Koji bread.
