Since one of our customers asked us for the recipe of miso soup and miso dressing, we are posting here:
How to make miso soup (2 servings):
- Boil 2 cups of water in a pot.
- Add cubed tofu and wait for the water to boil again.
- Add wakame seaweed and chopped green onions.
- Add 2 heaping tablespoons of miso. Just warm it a bit and enjoy. Do not boil after adding miso.
Good quality miso is full of umami and water is enough for soup base. If you prefer, you can use dashi (soup stock) in place of water, for extra umami, and here is how:
Option 1: Crash 2 dried shiitake mushrooms and put them in a pot with 2 cups of water. Leave it for 30min to 1 hour. Boil water and go to step 2 above.
Option 2: Put 5g of kombu seaweed and 2 cups of water in a pot and leave it for 30min to 1 hour. Heat the pot and remove kombu just before water boils. Once water starts to boil, add 10g of katsuobushi (dried bonito flakes) and boil for 1 minute. Remove katusobushi and go to step 2 above.
How to make miso dressing:
Mix 1 tbsp of miso with 2 tbsp of vinegar of your choice. Add 4 tbsp of olive oil and mix well. Enjoy with green salad or boiled/steamed veggies.
