Spelt

Spelt is one of the three ancient wheat varieties, alongside emmer and einkorn. It imparts a sweet and nutty flavor to bread. Although it has lower gluten content than modern wheat, its total protein content is higher.

Rye

We enjoyed variety of rye bread in Ontario, but could not find one locally, so this is our answer to our craving. Rye is also one of ancient grains.

What’s special about our bread:

Our bread is both delicious and nutritious. We handcraft them using organic whole grain flour, naturally leavened with sourdough, which allows wild yeasts and bacteria to break down the grain’s sugars and proteins during fermentation. The result is bread bursting with flavor and nutrients, made from the simple ingredients of flour, water, and salt. We prioritize ancient grains like spelt and rye for their digestibility. In contrast to industrialized, mass-produced bread, our loaves offer sustained energy, protein, vitamins, and minerals for daily consumption.
