Since a lot of people have asked us “What is Koji?”, I will do my best to explain here.

Koji is the Japanese national fungi (yes, there is such a thing as “national fungi”) used to make miso, soy sauce, sake, and our koji bread, of course!

Koji brings us so many health benefits. The main ones are as follows:

  • Decompose food. Food becomes soft and easy to digest
  • Create vitamins and minerals
  • They don’t survive in our stomach but their dead bodies become food for good bacteria in our gut

And they make our food tastier, too!

They are like superhero, and in fact, there is a manga called “Moyashimon, Tales of Agriculture”. It became a TV anime and a TV drama series. “Moyashi” is another name of koji.

Before we visit koji’s home country, there are 2 more markets as follows. Please place an order early for extra loaves of bread to cover our absence.

  • 2pm – 3:30pm on Wednesday, Jan.22th.
  • 10am – noon on Saturday, Jan.25th.
