Green tomato marmalade recipe

Ingredients:

  • 2 pounds green tomatoes
  • 2 tbsp ginger finely chopped
  • 1/2 grated zest and juice of lemon
  • 2 cups sugar

Method:

  1. Mix tomatoes with ginger and lemon.
  2. Add sugar and mix.
  3. Leave it overnight.
  4. Boil over medium high heat, until thickened (1-2 hours).
